This split pea soup has to be the simplest recipe and yet It has a sensational taste and is very nutritious.
There are some foods that are very beneficial for a diabetic and split peas are one of those foods. This dish should definitely be in your menu.
Peas help stabilise blood sugar levels while providing a steady supply of energy. Studies have shown that type 2 diabetics who eat at least 50 grams of peas per day can lower their cholesterol, their triglycerides and VDL (Very Low Density Lipprotein) by a significant amount.
Ingredients:
- 1 Packet of yellow split peas
- 2 Large carrots
- 1 Massel chicken stock cube
- Cracked pepper.
Method:
- Soak the split peas for at least six hours or overnight. Drain the water and rinse the peas thoroughly.
- Add 2 litres water and chop the carrots and stock cubes.
- Bring to boil and let it simmer for 15 – 30 min.
- Cover with a lid, turn off the heat leaving the pot on the hot plate.
- 60 minutes later blend to the desired consistency.
- Serve in a bowl with cracked pepper to taste.
