Stuffed mushroom is a fascinating dish.
Using a mushroom as a base with a tantalising mix of as grown, whole foods on top and then baked, this is a dish that is just divine.
Ingredients:
- 4 Large mushrooms
- 1 Onion
- 2 Garlic cloves
- 1/2 Red capsicum
- 1 Handful of baby spinach leaves
- 4 Mushroom stems
- 2 Tbs coconut oil
- 1 Egg
- Handful of walnuts
- 1/2 Tsp mixed herbs
- Himalayan salt & cracked pepper to taste
Method:
- Cut the mushroom stem
- Wash mushroom well
- Chop all ingredients finely including mushroom stalk
- Add mixed herbs
- Mix with egg & coconut oil.
- Layer mixture onto mushrooms
- Bake for 1/2 hour at 200 C
- Salt and pepper to taste.
