This lima bean dish is a exquisite culinary experience. Served hot there are distinct capsicum and tomato flavour but with a sweetness and the body of the lima beans. This is a beatiful dish with impressive flavours that make it irresistible.

Ingredients:
- 250g lima beans
- 3 capsicums
- 1 onion
- Himalayan salt to taste
Sauce Ingredients:
- 300g tomatoes
- ½ a capsicum
- 1 large clove of garlic
- 2 small onions
- 30ml olive oil
- 1tbs organic maple syrup
- 1½ tbs wholemeal spelt flour
- Himalayan salt & pepper to taste
- 1 Massel vegetable cube
Method:
- Soak the lima beans overnight.
- Drain beans, cook using fresh water, bring to boil and simmer until cooked.
- When almost cooked add salt to taste.
- When beans are cooked drain and set aside.
- Dice the onion and capsicum.
- Using olive oil fry in a pan until soft . Ensure pan is covered.
- Mix beans together with capsicum.
Method – Sauce
- Finely dice onion and garlic. (If using Thermomix – 6 sec, position 6, )
- Add oil and cook for 5 min (Thermomix – Tempe veroma, position 1½)
- Add capsicum and tomatoes, using nutri bullet or similar blend until smooth. (Thermomix – 30 sec, position 9)
- Add all other ingredients and pan cook for 10 minutes. (Thermomix 10min, Temp 100, Position 2)
- If necessary add himalayan salt and pepper to taste
Mix the sauce with the lima beans. Serve hot together with a salad.
