Lentils are known to be very healthy. They are packed with fibre, they are good for heart health and they have lots of iron. Most importantly for diabetics they provide energy to burn all whilst stabilising blood sugar levels. As good as all of this is lentils are also tasty to eat.
This dish can be used in conjunction with salads, baked vegetable or both or can be used as a replacement anywhere potatoes are used.
It is easy to make. Why not feast on food that is helping you get healthy all while loving your meal.
Ingredients:
- ¾ cup of lentils
- 4 large carrots
- 1 large or 2 small onions
- 1 clove of garlic
- 4 tbs cold pressed olive oil
- 2 bay leaves
- himalayan salt & cracked pepper to taste
Method:
- Soak the lentils for two to three hours
- Grate the carrots, chop the onion and crush the garlic.
- Fry the onion in the olive oil for 2 minutes in a mid size saucepan
- Drain the lentils and add together with the carrots , onion, garlic and bay leaves
- Add a small amount of water, bring to boil cook but mix from time to time. If the water evaporates during cooking ensure that extra water is added.
- Cook until lentils are soft.
- Add himalayan salt and cracked pepper to taste
Serve hot.
