This is an amazing recipe, lovely and moist, chocolaty, high in fibre and protein and just super yummy. It is safe for diabetics. Great to serve warm with a dollop of Greek yoghurt on the side, making a wonderful dessert. It resembles a pudding recipe. It’s very simple and quick to make, so a great alternative for a busy household.
Ingredients:
- 4 Tbs Chia seeds-soaked in 1 cup of water for 15 minutes
- ½ cup Raw Cacao
- 125 g of Coconut Oil
- 5 medium eggs
- 1 cup (175g) Almond Meal
- 1 cup Coconut Palm Sugar
- pinch of salt
- 1 tsp Bicarb Soda
Method:
- Preheat oven to 180 C.
- Line spring form cake tin with a non stick baking paper.
- Soak the chia seeds stirring frequently.
- Place all ingredients in a bowl and whisk to combine well, and to break up any lumps (at least 1 minute).
- Pour into lined tin.
- Bake in oven for 30-35 minutes or until it springs back when pressed in the middle.
- Let the cake cool for 5-10 minutes in the tin, then gently tip out onto a wire cooling rack-be very careful with this. The centre is quite soft so be gentle with it.
- Add the dollop of Greek yoghurt, ensure you don’t use low fat as this is loaded with carbs which equals sugar.
