This Cauliflower Soup is made for health. No sugar, no creams, all goodness. It has a distinct cauliflower taste, with touch of coconut taste. This is sure to please and is perfect on its own or as a part of a multiple course meal.
Ingredients:
- 1 head of cauliflower
- 3 carrots
- 1.5 litre of water
- 2 vegetarian chicken flavoured stock cubes (Massell)
- 1/2 cup of coconut cream
- Parsley to garnish
Method:
- Place water, chopped cauliflower and carrot in a mid sized pot (2 – 3 litres)
- Add stock cubes and bring to boil. Simmer for 15 min or until vegetables are tender.
- Remove from heat, blend for a couple of seconds leaving chunks to enjoy their flavour.
- Add coconut cream and cracked pepper to taste.
- Garnish with fresh parsley.
Serve hot.
