This is a favourite, made without creams or flavour enhancers, this soup has a full rich flavour that will satisfy the fussiest taste buds.
Ingredients:
- 1 onion
- 1 tbs olive oil
- 2 medium heads of broccoli
- 1.5 litre of water
- 2 vegetarian chicken flavoured stock cubes (Massell)
- 1/2 up of coconut cream
Method:
- Brown onion with oil in a medium sized pot, (2-3L), add chopped broccoli including the core.
- Then add water and stock cubes, boil for 10 minutes.
- Take off heat source and blend to create a smooth finish.
- Add coconut cream and cracked pepper to taste.
Serve hot.
