Borsch is a famous Russian beetroot based soup with many other beneficial vegetables as well. Beetroot has many health benefits and along with all of the other additions this soup is a very healthy option.
In this version of the soup the vegetables are cooked for only a short time. The taste is superb and it is a favourite for many people. Best of all this soup is made from as grown, whole foods so it is 100% safe for diabetics.
Ingredients:
- 3 Medium size beetroot
- 2 Carrots
- 1 Turnip or parsnip
- 1 onion
- 1/4 small head cabbage
- 1 Cup dry beans
- 1 Tsp of lemon juice
- Freshly ground pepper
- 2 Vegetable Massel stock cubes
- Himalayan salt to taste
- 1 Tbsp of coconut sugar to taste
Method:
- Peel and shred the beetroot, carrot and turnip or parsnip.
- Shred the cabbage, chop onion.
- Put in saucepan and cover with water. This will be approximately 10 cups.
- Add the stock cubes and cook until vegetables are soft.
- Cook the dry beans and add to the soup.
- Add the lemon & pepper.
- Add Himalayan salt and sugar to taste.
