This dish can be used wherever you would use potatoes or rice. It has a wonderful taste, is filling and satisfying. Barley has been shown to be extremely beneficial for type 2 diabetics so this is a dish that should be on your menu often. Mixed with vegetables, preferably organic, this dish can only be one thing and that is good for you.
Ingredients:
- 200g Barley
- 1 Onion
- 1 Carrot
- 1/2 Large red capsicum
- 4 Tbs of virgin olive oil
- 1 Vegetable stock cube (Massel)
- 150g Savoy cabbage
- Himalayan salt & cracked pepper to taste
Method:
- Cook barley with the stock cube until soft.
- Slice carrot, onion, capsicum and shred the cabbage.
- Fry lightly in olive oil until almost soft.
- Mix vegetables with the cooked barley.
- Salt and pepper to taste.
- You can substitute or add any vegetables that you enjoy.
