Who said cakes are unhealthy?This one has the lot. Taste and goodness.
If you have been unsuccessful in finding a yummy and fluffy as well as moist cake, that you can enjoy knowing it is good for you, then today you are in luck.
We have finally come up with a great cake recipe to share with you. You will need to plan a little ahead, but otherwise, it’s pretty straight forward.
Ingredients:
- 2 organic oranges-skin and all
- 6 free range organic eggs
- 1 and 1/3 cups of raw coconut sugar
- 250g almond meal-preferably the organic type
- 1 tsp baking powder
Method:
- Preheat oven to 170 C
- Oil a 23 cm spring pan, and line base with baking paper.
- Place the well washed oranges into a large pot. Bring to boil, and let simmer for an hour. Then place oranges on a plate to cool, and cut into quarters removing any pips along the way. Cool for about 30 minutes till it is at room temperature. Pulse in blender until smooth.
- Place whole eggs in a bowl and beat for about 3 mins, then add coconut sugar and beat for another 3 minutes till light and fluffy.
- Add the orange mix and the almond meal along with the baking powder, and stir gently until all ingredients are well combined.
- Pour into the prepared tin and bake for about 1 and ¼ hours, then let it cool in the oven. Once cool, place aside for around 6 hours or overnight to cool completely.
- Once it’s ready, remove from tin, and place on a serving plate and enjoy. You will find that this process prevents the cake from “flopping”.
