Have you ever thought what to do with some left over rice that you cooked up the night before? Well here is a great idea for a lunch or to accompany pretty much any meal. Brown rice being full of fibre and nutrients gives a much better and lower GI alternative to any bread or white rice.
Ingredients:
- 1 brown onion- finely chopped
- 2 cloves of garlic-crushed
- 2 Tbs of Macadamia or Sunflower oil
- 2 cups of brown rice pre-cooked
- 2 Tbs of salt reduced, if possible organic Soya Sauce
- Optional: you can add any veggies you like to make it more nutritious; don’t be afraid to experiment.
Method:
- Place the finaly chopped onion and garlic in a fry pan with the oil and let it turn golden/clear in colour. Monitor to ensure it does not burn.
- Add the rice and the sauce and let it sizzle for a couple of minutes to let the flavours penetrate through all the ingredients.
Serve warm with salad and some protein like patties. Enjoy.
