Replacing meat in your diet should not be rocket science. All you need to remember is to include nuts, legumes and seeds in your diet, and the protein intake should not be compromised.These patties include all those ingredients, therefore make a perfect meat substitute.

Enjoy with a pumpkin and sweet potato mash and a rocket salad on a cold winters evening and you will not miss your meat at all.

Who said that replacing meat can’t taste great?

Ingredients:

  • 2 cups of rolled oats
  • ½ cup of sunflower seeds
  • 2/3 cup of walnuts
  • 2 eggs – optional
  • a can of lentils drained and rinsed
  • 2-4 heaped Tbs of cottage cheese
  • 1 bunch of fresh parsley-washed and finely chopped
  • 2 Tbs of good quality Soya Sauce
  • Himalayan Salt and cracked pepper to taste
  • 1 clove of garlic-crushed
  • Oat bran for coating
  • Olive or coconut oil for frying

Method:

  1. Place the oats, seeds and walnuts in a blender and blend until resembles a slightly chunky wholemeal flour. Then add eggs and the other ingredients and combine well to form a pasty consistency. Cover and refrigerate for about ½ hour.
  2. Remover from the fridge. Warm a pan with some coconut oil, or other good quality cold pressed oil suitable for frying.
  3. Spoon a heaped Tbs of mixture/paste into the bowl with the oat bran, and coat while shaping into patty shapes. Place on a warmed up fry pan, and let cook turning them after 5-10 minutes.
  4. Once browned on both sides, place in a glass bowl and serve. Can be topped with home made mayonnaise. Great idea for lunch next day, if there are any left overs.
