This is a sensational Rich coconut chocolate slice recipe. It’s the kind of cake that you enjoy, without even a glimpse of guilty feelings, as there is nothing to feel guilty about.
The rich flavour gives you an instant WOW feeling, and is a perfect treat, perhaps served warm with a dollop of Greek Yoghurt for dessert.
Made from coconut flour which is gluten free, high in fibre and high in protein. With a GI of only 36 it is low in digestible carbs so it does not spike sugar levels.
Ingredients:
- 70 g raw cacao powder
- 130 g coconut oil
- 3/4 cup maple syrup
- 50g coconut flour
- 1/3 cup hazelnuts-roasted and roughly chopped
- 4 organic free range eggs – separated
- small pinch of sea salt
Method:
- Grease a 24x18cm slice tin with coconut oil. Preheat oven to 160 C.
- Combine the cacao with the melted coconut oil.
- Whip egg yolks with maple syrup until well mixed and creamy.
- Add the chocolate mix to maple/egg mixture and stir well.
- Gently fold in the flour and the nuts till well combined.
- Add salt to egg whites and whisk to stiff peaks.
- Gently fold the egg whites into the slice mix and transfer to slice tin.
- Bake in pre-heated oven for approximately 20 minutes(may be more depending on your oven).
- Remove from oven and allow to cool a little before turning out onto a rack to cool completely.
