It is amazing how simple it is to make up a recipe. It started off with me wanting to make a treat that is not only diabetic friendly, as has no sugar in it, but it also has no gluten for those suffering with gluten intolerance.
So since I had some Macadamia nuts in my pantry, I thought what would mix with such a nice and mild nut flavour enjoyed by many. That’s when dried Apricots popped into mind. So as a result, I created what tastes not only naturally sweet and enjoyable but also has that subtle Macadamia flavour through it, which is always nice.
You might have to hide these as they will disappear first off your table, especially if you tell your guests they are actually good for them.

Ingredients:
- 2 cups raw Macadamia nuts
- 1 cup of dried Apricots
- 1 Tbs Goji berries
- 2 Tbs Chia seeds
- 2 Tbs of Agave Syrup
- 1 tsp Vanilla extract or natural essence
Method:
- First, place 1 cup of the nuts in the blender until smooth
- Then place all the other ingredients in a blender or mixer, and blend for around 30-40 seconds or until the ingredients are well combined. I personally prefer a slightly crunchy effect, that is why the second cup of nuts are added later to assure some chunks of nuts are still present
- Shape the snacks into little balls using a teaspoon, then roll in some coconut
- Refrigerate for about an hour
This portion makes around 20-30 balls.
