This is a naturally sweet, melt in your mouth, sweet or dessert.
It contains all natural ingredients which means that this sweet will be a favourite. The natural sweeteners can be adjusted to taste.
This recipe contains flaxseed which is an excellent source of omega -3’s. Flaxseed can help reduce inflammation which can lead to asthma, rheumatoid arthritis, migraine and osteoporosis. Flaxseed is known to lower total cholesterol and LDL cholesterol levels. It may lower blood pressure. Flaxseeds are also a great source of fibre. Lignans, the fibres found in flaxseeds promote regular digestion and are even thought to have a role in breast cancer prevention.
Ingredients:
- 1/2 Cup coconut flour (Shredded coconut may be used but must be blended first)
- 1/4 Cup raw almond butter or almond spread
- 3 Tbs raw honey
- 3 Tbs ground flaxseed (Grind whole seed in blender or coffee grinder)
- 1 Tbs carob powder for rolling
Method:
- Combine the coconut flour and almond butter, honey & flaxseed in a medium bowl.
- Add a pinch of sea salt if your almond butter is unsalted.
- Using a wooden spoon stir thoroughly to combine ingredients as best you can.
- Use hands to finish the blending process then scoop 1 tsb of mixture and roll to form balls.
- Place carob powder in a small bowl. One at a time place a truffle in the bowl and roll gently to coat.
- Place on a plate and chill in fridge for 15 minutes.
Serve cold.
