Who doesn’t like Nutella?
The only problem is that it is sugar loaded and obviously not good for diabetics or for people trying to lose weight.
This is a spread that you can make at home, from as grown whole foods, meaning there is no processed sugar to worry about.
This is a diabetic safe recipe and will replace your Nutella perfectly.
Who said naughty things can’t be good for you?
Ingredients:
- 2 cups raw hazelnuts
- 1.5 tbsp coconut oil
- 1-2 tsp pure vanilla extract or raw agave syrup
- 1/2 cup coconut sugar
- 1.5 tbsp raw cocoa powder
- 1/4 tsp fine grain Himalayan salt
Method:
- Preheat oven to 180 Celsius and roast the hazelnuts for 15 minutes. Watch closely. When the skins have darkened and some have come loose the nuts are ready
- Place nuts into the centre of an old damp tea towel (This process may stain the tea towel). Fold the tea towel over the nuts and rub them for a couple minutes to loosen the skins. Place the peeled nuts into the food processor. Keep repeating the towel rubbing until most of the nuts have been peeled. Add the remaining nuts to the food processor.
- Blend the nuts, stopping to scrape down the bowl every minute or so. This process may take up to 10 min depending on your processor. Once finely blended add the coconut oil and process until it becomes smooth.
- Add in the rest of the ingredients slowly and keep processing and scraping down the bowl for another 5-10 minutes, or until silky smooth. The coconut sugar will thicken up the spread significantly however the processing will soften it once again.
- Store in an air-tight container or jar and refrigerate. The spread will harden slightly when chilled. Bring it to room temperature to soften.
