Even in the winter months it is great to have a salad accompany any meal.
This salad is a little special as the rocket adds a slight stronger flavour to your ordinary salad. Using a slightly more flavoursome dressing therefore goes well with this type of salad, and it helps to complement the slightly bitter tinge to the rocket.
Ingredients:
- 2 handfuls of rocket leaves-preferably organic-washed well
- 5 cherry tomatoes, cut into quarters
- ½ red capsicum
- 1 ripe avocado, peeled and cut into squares
- ¼ red or brown onion sliced thinly
- ½ cucumber-washed
- ½ block of feta cheese of your choice
- a handful of sunflower seeds
- Himalayan salt and cracked pepper to taste
- 4 Tbs of the Dijon mustard salad dressing made ahead
Method:
- Place all ingredients in a salad bowl. Mix together and enjoy .
