Great tasting lentil based soup, rich in protein and other beneficial nutrients.This is a soup which is not only very tasty but 100% safe for sugar levels because it is made from no processed foods.
We have made this soup and it has passed our taste test. Enjoy!

Ingredients:

  • 250g of French Black Lentils
  • 1 medium onion
  • 2 tbs of grape seed oil
  • 2 carrots
  • 1 medium sized sweet potato
  • 2 small zucchini
  • 5 small mushrooms
  • 2 chicken stock cubes (Massel)
  • 1L of water
  • Pinch of mixed herbs
  • Chilli Flakes
  • Himalayan salt to taste
  • Cracked pepper to taste

Method:

  1. Boil lentils for 30 – 60 min. (This can be done a day ahead).
  2. Rinse and drain.
  3. Place onion and grape seed oil in 2L pot.
  4. Stir over medium heat until onion becomes golden brown.
  5. Add cubed or chopped vegetables. Keep stirring for around 10 min until the vegetables release their aroma.
  6. Then add water and stock cubes. Boil for 15 min.
  7. Then add cooked lentils and mixed herbs.
  8. Sprinkle with 5 – 10 chilli flakes.
  9. Add Himalayan salt and cracked pepper to taste.
  10. Let simmer for final five minutes allowing for all flavours to mix.

Serve hot.
