For people that go sugar free an important change that is made is to remove all products that contain or are mode from white flower out of the dietary intake.
This is one of those very special recipes. Yes it looks like bread, yes it feels like bread and it even tastes like bread. This bread however is made from purely from buckwheat. Buckwheat is not a grain so it is totally gluten free. According to researchers who published a study in the Journal of Agricultural and Food Chemistry buckwheat may be helpful in the management of diabetes.

Ingredients:
- 450 grams of stone ground or Thermomix made buckwheat flour
- 400 ml of filtered water
- 3 tsp of coconut sugar
- 3 tbs cold pressed virgin olive oil
- 1 tbs of cinnamon
- ½ tsp of himalayan salt
- 7 grams of dried yeast.
Method:
- Grind the raw buckwheat or if using a Thermomix pulverise the buckwheat by setting to 10 for 30 seconds.
- Add all ingredients to bread maker.
- Set bread maker for basic medium (This cycle usually takes around 3 hours and 20 minutes).
- When kneading begins watch the dough to ensure that is is thoroughly mixed. Because the dough consistency is different to normal bread sometimes the dough will stick to the side of the tray. If this is the case unsure that the dough is mixed by using a spoon. Once mixed through it can be left as is
After baking ensure to remove the bread immediately and put on cooling rack. This bread has a higher than normal moisture content. Removing it from the bread maker ensure it dries appropriately.
