Healthy snacks are often so hard to come by. The point is that if you are going to have a snack then it should provide you with the following. Firstly it has to taste great. A snack is meant to be enjoyed so the taste is the all important factor. Secondly a snack should provide you with some real health benefits. What is the point of having a snack and doing damage to your health?
This snack has it all, the taste the health benefits and even the looks. Made from raw cacao it will amongst other things provide you with the following benefits:
- Magnesium, and other essential minerals including calcium, sulfur, zinc, iron, copper, potassium, and manganese.
- Polyphenols called flavonoids, with antioxidant properties.
- Vitamins: B1, B2, B3, B5, B9, E.
- Essential heart-healthy fat: oleic acid a monounsaturated fat.
- Protein.
- Fiber.
This is easy to make and is a extremely enjoyable snack.
Ingredients:
- 1 cup date
- 1 cup nuts (walnuts, cashews or almonds)
- 1 cup apricots
- ⅓ cup coconut oil
- ⅓ cup raw cacao
- 1 tbs chia seeds
- 1 cup shredded coconut
Method:
- Soak dates for 15 minutes in warm water to soften.
- Blend nuts on high speed until they reach a fine crumb texture and set aside.
- Blend the dried fruit, raw cacao powder, ¼cup of shredded coconut, coconut oil and chia seeds until it reaches a smooth texture.
- Add the ground nuts blend together until well combined.
- Remove mixture from the processor with a spoon and roll into small balls.
- Coat in shredded coconut.
- Store in an airtight container and refrigerate for 2 hours until firm.
