These patties are made from mung beans and coated with sesame seeds. They are tasty and easy to make. These patties can be used with most main meals.
There are some very good reasons why it is so healthy to eat mung beans. Here is just some.
- Low GI – Mung Beans have a very low GI of 31. This means that mung beans promote healthy blood sugar levels.
- 1 cup of mung beans contains 3.16 grams of protein.
- Mung beans contain isoflavon which helps regulate hormonal activity.
- They contain protease inhibitors which are know to reduce breast cancer risk.
- Mung beans help lower cholesterol as they are low in cholesterol and high in diatary fibre.
Ingredients:
- ½ a cup of brown rice
- ¾ cup of ground oats
- ¾ cup of mung beans
- 1 cup of sesame seeds
- 1 onion
- 1 large or 2 small cloves of garlic
- Himalayan salt & pepper to taste
Method:
- Soak the mung beans overnight.
- Cook the beans in two cups of water.
- Cook the rice in two cups of water
- Drain the beans and rice.
- Using a food processor mix the beans and rice.
- Add the onion and garlic, salt, pepper and oats and remix. If this mixture is to thick add a small amount of liquid drained from the cooked beans.
- Pre heat oven to 200 c, line a baking tray with baking paper, form patties and roll in the sesame seeds.
- Bake for 30 minutes but turn over after 15 minutes.
This recipe makes approximately 18 standard size patties.
