Everyone likes cookies. These cookies are healthy and diabetic friendly. They have a wonderful taste with a tangy twist.
Made from almonds and oats they not only taste fantastic but are also good for you.
They are quick and easy and fun to make.
With this recipe there is no reason why anyone would need to eat processed cookies.
Ingredients:
- ⅔ cup of almonds
- 1½ cup of oats
- 2 tbs coconut sugar
- ⅓ cup of cold pressed olive oil
- ⅔ cup of water
- lemon zest from 1 lemon
- ¼ cup of almond flakes
Method:
- Grind the almonds and oats to a fine texture.
- Add all ingredients.
- On a tin lined with baking paper, with a spoon shape cookies.
- Decorate with flakes .
- Bake in 170 °C for 30 minutes.
This recipe makes around 18 standard size cookies.
