Cauliflower Soup

 

This Cauliflower Soup is made for health.  No sugar, no creams, all goodness.  It has a distinct cauliflower taste, with touch of coconut taste.  This is sure to please and is perfect on its own or as a part of a multiple course meal.


Ingredients:

1 head of cauliflower

3 carrots

1.5 litre of water

2 vegetarian chicken flavoured stock cubes (Massell)

1/2 cup of coconut cream

Parsley to garnish

Method:

Place water, chopped cauliflower and carrot in a mid sized pot (2 - 3 litres)

Add stock cubes and bring to boil. Simmer for 15 min or until vegetables are tender.

Remove from heat, blend for a couple of seconds leaving chunks to enjoy their flavour.

Add coconut cream and cracked pepper to taste.

Garnish with fresh parsley.

Serve hot.
